The company, based in the Agri-Food City of Tudela, recorded €55 million in revenue in 2024 (+20%). Of this amount, 53% comes from the export of its products to 23 countries. It has now acquired 31,000 m² for future expansion.
31,000 M² MORE ACQUIRED
With a view to the future growth of its industrial capacity and activity, the Navarre-based company has acquired a 31,000 m² plot in the Agri-Food City of Tudela, next to its current facility (with 6,700 m² built). “It is land reserved for future expansions and there are no deadlines yet,” says Carlos Sesma.
This latter company, dedicated to curing services, together with other outsourced curing facilities (Contodo, Eulogio Ramos and Mendoza Arranz), currently supply cured ham to Jamones Volatín. The company’s activity in this category therefore consists of processing and obtaining blocks and centres. “Blocks already represented 60% of our total ham sales last year, compared to 50% in 2023. The rest was sold boneless and bone-in,” explains the executive. Specifically, Carlos Sesma states that 1,200,000 hams were processed at the Tudela plant last year. “The cured ham arrives whole, without the leg and with the skin on. It is deboned, trimmed, polished and turned into blocks, which is what we market,” he explains.
SUPPLIER TO DIA, MAKRO, ECOMORA AND LUPA
The blocks are sold to other companies, both in Spain and abroad, for the production of sliced products, while other manufacturers and slicers also make up its customer portfolio for cured loin. In addition, Jamones Volatín markets ham (in centres and bone-in pieces) in the organised retail channel in Spain, Germany, France and other countries. In the domestic retail sector, it supplies Dia, Makro, Ecomora and Lupa. “Our main foreign destinations, for all formats and products, are Germany, France, Italy, Japan, Brazil and Colombia”.
Its sales of white cured ham increased by 6% in 2024, rising from the 10,600 tonnes recorded in 2023 to 11,200 tonnes, of which 53% were sold outside Spain. In addition, “our loin production increased from 700 tonnes fresh to 1,200 tonnes”. In total, the company placed 12,300 tonnes of cured products on the market, also including small volumes of guanciale, pancetta and coppa, items it began producing over the last year.
LOIN FACTORY WITH AN INVESTMENT OF €3 MILLION
The cured loin production process is also carried out entirely by Jamones Volatín itself at its Tudela factory, where it has been based since 2015, although the company was founded in 1998. “The loin arrives fresh and we cure it,” says Carlos Sesma. The gradual growth of this product line since its industrial and commercial incorporation in 2017, together with the boost recorded in 2024, has led the company to a major expansion of its industrial facilities for this product. The project consisted of adding a 1,000 m² building, already in operation, connected to the previous loin area. In this way, a complete and independent factory has been created for this product, “aseptic and separate from the ham facility,” including two maceration pumps. This year, 600,000 kilos of cured loin have been produced, but with the new factory for this product, inaugurated on 19 February, the company expects to double that volume in 2025 and reach around 1,200,000 kilos of cured loin on the market.
The project will ultimately involve an investment of €3 million, compared to the €2 million planned a year ago. Of the total approved amount, €2 million was invested in 2024 and €1 million has been budgeted for this year. The expansion and reconfiguration of the factory will involve the incorporation of a second higher-capacity stuffing machine, a thermoformer, two drying chambers, cold rooms and reception, vat and other areas. “The improvements made will allow us to access new markets with higher quality requirements, such as Mexico and Korea.”
